PROBLEM TO BE SOLVED: To provide a method of manufacturing a liquid crystal display element wherein satisfactory white and black display can be performed for a long period and display color and high contrast in an initial period can be maintained for a long period. SOLUTION: The method of manufacturing the liquid crystal display element wherein a chiral nematic liquid crystal composition containing a self-organization type gelling agent is encapsulated in a cell includes an encapsulating step for encapsulating the chiral nematic liquid crystal composition, a heating step for heating the liquid crystal display element after the encapsulating step and a cooling step for cooling the liquid crystal display element after the heating step and is characterized in that the liquid crystal display element is gradually cooled in at least a prescribed temperature range in the cooling step.
