<P>PROBLEM TO BE SOLVED: To provide a technique for obtaining pasta of al dente texture by an easy method requiring no boiling process without using an additive. <P>SOLUTION: A refrigerated pasta set includes refrigerated half-raw pasta noodles obtained by boiling dry pasta for 30-50% of a standard boiling time and naturally cooling the noodles to 20-30°C, and refrigerated pasta sauce having water content more than normal pasta sauce composition by 5-25 mass%. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
