摘要 <p><P>PROBLEM TO BE SOLVED: To provide a method for processing a persimmon food material intended for solving such problems that (1) as for a conventional method for extracting components from persimmon and fruits, many of the methods are fine particle production by a heat crushing method or distilled essence extraction by a heating distillation under reduced pressure, and destroy of main components by heat is the main cause of the problem, and (2) as for a processing method for using entire persimmon or entire peeled persimmon as a food material, solar drying treatment is a main part and requires long time working days to make efficiency poor, and also the best-before period is short because of a persimmon storage condition to cause merchandise loss. <P>SOLUTION: This method for processing the persimmon food material comprises continuous treatment of instant freezing after washing and vacuum freeze-drying treatment so as to enable freshness retention and long-period storage, in view of the fact that a main reason why persimmon freshness cannot be retained is thawing, moisture deterioration and oxidation at the time of cold reserving shipping, excluding raw products. The peeled persimmon or entire persimmon subjected to vacuum freeze-drying treatment can be used for other dish by reconstituting with hot water, and diverted to seasoning mixed with other additive by crushing powder processing so as to solve merchandise loss. <P>COPYRIGHT: (C)2006,JPO&NCIPI</p>
