<P>PROBLEM TO BE SOLVED: To provide a method for producing heat-treated fish eatable even by a care-requiring seriously handicapped person in a manner like a person who is not physically handicapped, and having soft meat. <P>SOLUTION: This method for producing the heat-treated fish having softness of ≤220 g/cm<SP>2</SP>comprises in detail, a process of heating fish body with superheated steam and a process of steaming the heated fish body. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
