<P>PROBLEM TO BE SOLVED: To obtain fermented soybean dressing as a seasoning material of subsidiary food, eatable even by people who dislike fermented soybeans. <P>SOLUTION: The fermented soybean dressing is obtained by finding the constitution of dressing ingredients as follows so as to delete flavor peculiar to fermented soybeans and bring to Bacillus natto to a spore state. The constitution comprises 5-10 wt.% of fermented soybeans, 16-20 wt.% of vinegar, 48-52 wt.% of edible oil, 5-7 wt.% of sesame oil and 16-20 wt.% of mineral water. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
