<P>PROBLEM TO BE SOLVED: To provide a method for preparing salted soup, capable of providing a menu of a new dipping or pouring soup totally without using conventional soy sauce used in a Japanese noodle and buckwheat noodle store, prepared at a low cost, excellent in an antiseptic effect and the uniformity of its quality and conforming with recent light-seasoning tendency and health intention. <P>SOLUTION: This salted soup is prepared by boiling dried bonito for a prescribed time to form broth, adding an appropriate amount of salt together with sweet sake, etc., boiling, then cooling by a natural heat radiation and then maturing at least one night in a refrigerator, and is used as the dipping or pouring soup without using the soy sauce. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
