<P>PROBLEM TO BE SOLVED: To provide a new charbroiled sausage looking delicious and having deep taste in a sausage production process. <P>SOLUTION: This charbroiled sausage has scorch on a sausage surface by a solidification heating treatment after casing filling for sausage, a deep frying treatment with a fryer after peeling casing and a charbroiling treatment. A method for producing the charbroiled sausage comprises combining a solidification heating treatment after casing filling for sausage and a deep frying treatment with a fryer after peeling casing with a charbroiling treatment, and applying scorch to the sausage surface through performing the treatments. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
