<P>PROBLEM TO BE SOLVED: To provide a gelled food composition for producing gelled food where curdlan is homogeneously dispersed in water without requiring any strong stirring/mixing treatment or any chemical alkali agent: and to provide a method for producing gelled food using the gelled food composition enabling gelatinization at normal temperature and improving safety and taste quality of food to which the composition is added. <P>SOLUTION: The composition is obtained by dissolving or swelling the curdlan with so-called ionized alkaline water physically containing much hydroxide ion.
