GELLED FOOD COMPOSITION AND METHOD FOR PRODUCING GELLED FOOD USING THE SAME

PROBLEM TO BE SOLVED: To provide a gelled food composition for producing gelled food where curdlan is homogeneously dispersed in water without requiring any strong stirring/mixing treatment or any chemical alkali agent: and to provide a method for producing gelled food using the gelled food composition enabling gelatinization at normal temperature and improving safety and taste quality of food to which the composition is added.

SOLUTION: The composition is obtained by dissolving or swelling the curdlan with so-called ionized alkaline water physically containing much hydroxide ion. The method for producing gelled food using the composition comprises adding the gelled food composition to liquid food material so as to gelatinize the food material at normal temperatures.
