GRAIN HAVING STARCH AGING-PREVENTIVE FUNCTION, AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide grain having starch aging-preventive function without substantially changing characteristics as grain such as rice: and to provide a method for producing the grain.

SOLUTION: The grain contains at least one kind of extrinsic amylose compatible substance. The method for producing the grain to which starch aging-preventive function is imparted comprises treating the grain under high pressure in a solution where the amylose compatible substance is dissolved. A cooked grain food is provided by the method.
