<P>PROBLEM TO BE SOLVED: To provide a method for producing a processed egg yolk-containing material causing no sandy feeling even when used as a raw material for a product to be cooked, causing no scorch even when cooked with a sterilizer, and imparting the body taste peculiar to egg yolk to the product. <P>SOLUTION: The method for producing a processed egg yolk-containing material comprises acidizing egg yolk-containing raw material, and applying shearing force on the raw material under heating.
