<P>PROBLEM TO BE SOLVED: To provide retort rice gruel excellent in flavor derived from rice, almost equal or more than hand-made rice gruel boiled in a pan in spite of giving excessive heating treatment by retort treatment and to provide a method for producing the rice gruel. <P>SOLUTION: The retort rice gruel is such that the ratio of the peak area (quantitatively analyzed ion m/z56) of hexanal to the peak area (quantitatively analyzed ion m/z34) of hydrogen sulfide as the volatile constituent of the retort rice gruel is ≤100 when analyzing the volatile constituent of the retort rice gruel with a solid phase micro extraction-gas chromatograph mass spectrometry method (SPME-GC/MS method).
