<P>PROBLEM TO BE SOLVED: To provide pretreated meat for persons with weak mastication force having tender even after cooked so as to be easily masticated even by infants having underdeveloped masticating force or aged person who has weak masticating force, and having favorable palate feeling without being subjected to processing such as crushing, chopping, reformation or the like. <P>SOLUTION: The pretreated meat for person with weak mastication force is obtained through soaking meat into organic acid-containing seasoning comprising at least either one of fruit juice, fruit fermented material or crop fermented material, and alkali metal hydroxide or organic acid calcium salt for a short period of time in advance. Through such a process, the meat is pretreated with the organic acid-containing seasoning to easily and safely obtain, without any effort, a meat product for the persons with weak mastication force, having hardness, palate feeling and taste favored by infants even after cooked. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
