A polynucleotide encoding the following protein (a), (b) or (c). (a) A protein containing the amino acid sequence represented by SEQ ID NO:2. (b) A protein containing an amino acid sequence derived from the amino acid sequence represented by SEQ ID NO:2 by substitution, deletion, insertion or addition of one or several amino acids and having a tannase activity. (c) A protein containing an amino acid sequence showing a homology of 90% or higher with the amino acid sequence represented by SEQ ID NO:2 and having a tannase activity.
