<P>PROBLEM TO BE SOLVED: To provide sausage which is juicy and has a good taste without increasing the contents of fats and water, and to provide a method for producing the same. <P>SOLUTION: This sausage is characterized by comprising a jellied broth-like curd obtained by mixing powdered gelatin with a jellied broth-like curd raw material comprising an extract seasoning and water, thermally melting the mixture, cooling the product, and then cutting the cooled product; and a mixture obtained by mincing meat of raw material with a cutter, and then seasoning the minced meat; adding and stirring the cut jellied broth-like curd to the mixture to disperse the jellied broth-like curd in the sausage in a particle state, wherein the gelatin of the jellied broth-like curd is not separated also after thermally cooked. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
