<P>PROBLEM TO BE SOLVED: To provide safely eatable coloring matter having pigment derived from vegetables and fruits as the raw material. <P>SOLUTION: This coloring matter is made excellent in fixation to food and paper and eatable through adding edible thickening materials (Arabian gum, tamarin, starch, thickener or the like) and stabilizers of pigment (salt, sugar, alum, sodium bicarbonate or the like) to pigments extracted from juice of natural vegetables or natural fruits. The coloring matter is harmless as coloring matter and contains nutriments of materials owing to the pigments of vegetables and fruits.
