An odourless vegetable milk is obtained from soy or other beans, by soaking the beans in water, grinding with the addition of water, homogenising, adjusting the pH to about 6, adding the mould bran of Aspergillus oryzae, niger, or glaucus, incubating for a few hours at 35-45 DEG C. with agitation, sterilising, and homogenising. |
