<P>PROBLEM TO BE SOLVED: To provide noodles and noodle dough sheets consisting mainly of rice powder, having good palate feeling/taste and not subjected to heating prior to noodle making: and to provide a method for efficiently producing the noodles and the noodle dough sheets. <P>SOLUTION: The noodles or the noodle dough sheets consists mainly of raw material powder obtained by adding polysaccharide thickener including a mixture of guar gum and xanthan gum to rice powder. The method for producing the noodles and the noodle dough sheets comprises a process of adding the mixture of guar gum and xanthan gum to the rice powder, mixing them together and adding water to the mixture followed by kneading the mixture to obtain a kneaded material, and a process of rolling the kneaded material to prepare noodle strips. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
