PROBLEM TO BE SOLVED: To provide a denitrification method of water for rearing an aquatic animal, which remarkably delays or skips a period of water exchange or cleaning of a water tank for rearing an aquatic animal, which is generally carried out, a denitrification apparatus and a filter medium for denitrification. SOLUTION: The denitrification method of water for rearing an aquatic animal comprises contacting and treating water for rearing an aquatic animal with a filter medium obtained by mixing a microorganism carrier with a hydrogen donor composed of animal or vegetable oil and fat-derived product solid at a normal temperature.
