PROBLEM TO BE SOLVED: To provide a processed starch which has excellent adhesive force and cohesive force, does not require a heating treatment after adhered and bonded, and can express proper water resistance without affecting environments, and to provide a method for producing the same. SOLUTION: This method for producing the processed starch comprises reacting starch containing amylose in an amount of >5% with a reducing agent and an oxidizing agent in a state suspended in water. The obtained processed starch has high water resistance and a high solution gelation rate.
