<P>PROBLEM TO BE SOLVED: To provide oil-in-water emulsified food excellent in heat resistance and water-absorption resistance obtained through emulsifying water phase raw material and oil phase raw material, and excellent in both of heat resistance and water-absorption resistance: and to provide a method for producing the oil-in-water emulsified food. <P>SOLUTION: The oil-in-water emulsified food excellent in heat resistance and water-absorption resistance is obtained through emulsifying the water phase raw material and the oil phase raw material, and contains plasma fraction produced by fractionating lysed yolk and polyoxyethylene sorbitan fatty acid ester. The method for producing the oil-in-water emulsified food excellent in heat resistance and water-absorption resistance comprises addition and formulation of plasma fraction produced by fractionating lysed yolk and polyoxyethylene sorbitan fatty acid ester. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
