<P>PROBLEM TO BE SOLVED: To provide a method for improving the flavor/taste of animal extract and yeast extract through suppressing unfavorable peculiar smell such as sulfur odor, to provide a substance having food flavor/taste improving function for the method, and to provide a food flavor/taste improving composition having the substance as the active ingredient. <P>SOLUTION: This method for improving food flavor/taste comprises obtaining a protein enzymolysis product by decomposing potato protein with Aspergillus oryzae and proteolytic enzyme. The protein enzymolysis product has effect of masking sulfur odor (like animal odor) and function of improving the flavor/taste of animal extract and yeast extract, or other acids, an enzymolysis product, a fermentation product or a seasoning food through suppressing unfavorable peculiar smell such as sulfur odor. The protein enzymolysis product produced by the method can be used as the food flavor/taste improving composition having the protein enzymolysis product as the active ingredient. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
