<P>PROBLEM TO BE SOLVED: To provide a method for producing a retort pouch food storable even at a temperature as high as about 40°C without lowering the viscosity and keeping desirable viscosity level in eating. <P>SOLUTION: A retort pouch food obtained by filling a food composed of an aqueous liquid material containing ≥3 mass% starch or a food containing the aqueous liquid material in a retort pouch is sterilized by heating, cooled to lower the food temperature in the retort pouch to ≤30°C within 60 min from the start to the end of the cooling process, and aged by sealing the pouch in a vessel made of a heat-insulating material to obtain the retort pouch food. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
