<P>PROBLEM TO BE SOLVED: To obtain a health food which abundantly contains anthocyanidin being an active ingredient of black soybean, is in a state in which black soybean has germination activity with the highest nutrient just before germination and which comprises black soybean skin abundantly containing GABA (γ-aminobutyric acid) useful for the human body and to provide a method for producing the same. <P>SOLUTION: The health food comprises mixing/grinding black soybean seed which is separated from black soybean skin, immersed in water, made in a state of having germination activity and roasted and black soybean skin which is separated from black soybean or separated from black soybean and roasted. The health food comprises black soybean skin as a powder product obtained by mixing/grinding black soybean seed which is separated from black soybean skin, immersed in water for a fixed time, made in a state of having germination activity and subjected to a cold water feed process, a steaming process of steaming with steam, a drying process, a roasting process and a cooling process and black soybean skin which is separated from black soybean or separated from black soybean and subjected to a roasting process.
