The present invention describes a process for inducing a higher growth and accumulation of carbohydrates in agave plants using interpolyelectrolytic complexes from acrylic-chitosan polyacid and derivatives thereof. Said complexes activate the natural signalling mechanism of plants, thus promoting a higher growth and carbohydrate accumulation. The complexes are water-dispersible and applied by immersion, direct spraying, and nebulization or in in-vitro culturing media. The application of the process is performed provided that the growth and carbohydrate accumulation in agave plants are to be optimized.
