摘要 FIELD: cannery industry. ^ SUBSTANCE: claimed method includes grinding of pork or poultry meat, addition of protein-and-fat emulsion, onion, table salt and spice; component blending, pre-packing; sterilization and cooling. Components are blended in copper in two step. In the first step protein-and-fat emulsion is obtained in chopper by blending of sequentially charged textured barley flour, water and pork grease in ratio of (1-1.2):(3-3.5):(1-1.2), respectively.
