GENE ENCODING METHYLATED CATECHIN BIOSYNTHESIS ENZIME

摘要

PROBLEM TO BE SOLVED: To provide a gene encoding a methylated catechin biosynthesis enzyme capable of efficiently biosynthesizing methylated catechin of high antiallergic activity.

SOLUTION: The methylated catechin synthesis enzyme is obtained by isolating the gene from methylated catechin-containing tea leaves and transforming the gene into Eschelichia coli. A method for biosynthesizing at least one kind of methylated catechin selected from epigallocatechin-3-gallate derivatives and their isomers, using the enzyme, is provided.
