METHOD FOR EXTRACTING USEFUL COMPOUND AND NUTRITIVE MATERIAL FROM EDIBLE BEANS

PROBLEM TO BE SOLVED: To provide a method for safely and efficiently extracting and producing a useful compound and a nutritive material from edible beans.

SOLUTION: The method for extracting the useful compound, concretely plant sterols, a plant sterol derivative or the like involves extracting dried seed powder of the edible beans with supercritical carbon dioxide. The method for extracting the nutritive material of the edible beans, concretely an amino acid component composition from the extraction residue is also provided.
