An ink-jet recording ink comprising water, a colorant and a surfactant, wherein a content of the surfactant is 0.3 mass % or more based on the whole mass of the ink, and the ink further comprises a sucrose compound represented by the formula (i) wherein R<SUB>1 </SUB>to R<SUB>8 </SUB>are individually selected from the group consisting of hydrogen, alkyl groups and alkylene oxide groups, with the proviso that at least one of R<SUB>1 </SUB>to R<SUB>8 </SUB>is an alkylene oxide group, the total number of alkylene oxide units possessed by the alkylene oxide group in a molecule is 1 to 20, and the proportion of an ethylene oxide unit to the total number of the alkylene oxide units in the molecule is 20.0% or more.
