<P>PROBLEM TO BE SOLVED: To obtain cereal-based processed food, cereal-based processed drink, secondary processed food and secondary processed drink each capable of satisfying high nutrition, high function, high digestibility and absorption, excellent taste, sweet-smelling flavor, new palatability or the like. <P>SOLUTION: The cereal-based processed food is obtained by roasting at least one kind of a raw material selected from cereals, heat-treating the roasted raw material and fermenting the heat-treated raw material. A method for producing the processed food comprises a roasting process for roasting the raw material, a small sizing working process for processing the raw material to a size smaller than that of an original form and a fermenting process for fermenting the small-sized processed raw material.
