<P>PROBLEM TO BE SOLVED: To provide a method for sterilizing/washing small fish capable of preventing bactericide from infiltrating into raw material small fish in a boiling process, letting no hydrogen peroxide and no other bactericide remain even in a product, increasing color and luster of a fish body as a product and improving quality through subjecting the raw material small fish to sterilizing/bleaching/washing treatment using sterilization water obtained by diluting hydrogen peroxide with water as bactericide before a boiling process, and to provide an apparatus for the method. <P>SOLUTION: This method and apparatus for sterilizing/washing the small fish comprises processing the raw material small fish passing through washing, boiling and drying processes. The raw material small fish before boiling is subjected to sterilizing/bleaching/washing treatment by pouring the raw material small fish into a sterilization water way 8, circulating sterilization water obtained by diluting hydrogen peroxide with water as bactericide in a sterilization water circuit 9 to sterilize the raw material small fish and diffusing sterilization water from a washing nozzle 22 to remove bactericide in the washing process as a previous process of the boiling process, and then supplied to the boiling process in which no bactericide is added. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
