A cream is obtained by mixing flour (78.60 g), sugar (100 g), salt (0.70 g) and yeast (4.10 g). Mixing the cream with eggs, adding the obtained cream to lemon juice and crushed skin, incorporating the mixture into pomade butter (43 g), allowing the mixture to set for 24 hours and cooking on a lit and out of reverse-slab extinguished oven for 30 minutes. The cake is syruped with a mixture (125 g): of water; lemon juice; and sugar, and iced with a mixture of sugar and lemon juice. The lemon/icing sugar mixture is passed into the microwave oven.
