PROBLEM TO BE SOLVED: To provide a method for stopping a liquid-liquid extraction column having trays for bringing a volatile oil layer into contact with a water layer and permitting efficient and safe practice. SOLUTION: This method for stopping the liquid-liquid extraction column having the trays for bringing the volatile oil layer into contact with the water layer has a stopping process of stopping the supply of the water and oil layer liquids to the column, a replacing process of, after stopping the supply, replacing the water layer in the column by supplying succeedingly fresh water serving as an extracting agent, drawing the extract from the bottom of the extraction column and stopping the supply of fresh water after completion of the replacement, a bubbling process of supplying an inert gas from a part near the bottom of the extraction column to make the gas pass by bubbling through the liquid inside the extraction column and drawing the evaporated oil layer and the inert gas from a part near the top of the extraction column, and a drawing process of drawing the water layer liquid in the extraction column after removal of the oil layer from the bottom of the extraction column.
