<P>PROBLEM TO BE SOLVED: To provide an oil and fat composition having favorable meltability, prevented from fat bloom or flavor deterioration and long preservable although containing much lard having a problem of easily producing coarse crystals while having distinctive rich flavor. <P>SOLUTION: The oil and fat composition contains ≥50 pts.mass of lard, and the oil phase of the oil and fat composition contains 0.01-0.6 pts.mass of palmstearin based on the 1 pts.mass of the lard. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
