PROBLEM TO BE SOLVED: To provide a method for producing an immobilized enzyme having high activity and excellent handleability. SOLUTION: This method for producing the immobilized enzyme comprises immobilizing a degradative enzyme for oil and fat on a carrier for immobilization by adsorption, bringing the immobilized enzyme into contact with an organic solvent having a dissolved fat-soluble fatty acid or its derivative and adjusting the residual water content of the enzyme to 1-20% based on the weight of the carrier.
