摘要 There is disclosed a method for predicting shear force of a carcass that has been aged for at least 7 days post mortem comprising subjecting a sample of meat to electromagnetic radiation comprising wavelengths of at least a portion of the visible and near infrared ranges within a period of greater than 10 to about 96 hours post mortem and collecting at least one spectrum and applying a mathematical model to the spectrum to predict the shear force of the carcass.
