A banana or plantain pulp product, being horny and translucent and having a moisture content of 5-15 wt. per cent., may be prepared by heating a section of pulp, having a total sugar content of up to 1 wt. per cent., and a thickness of 0.02-0.1 inch, to 65-120‹C. for 1-45 minutes, cooling to 1.5-93‹C., and drying, if desired after washing with water. The product may be cooked, for example by frying at 135-205‹C. for 5-60 seconds to give a crisp friable product having a fat content of less than 30 wt. per cent. Seasonings, flavourings, sweeteners, and anti-browning agents may be present. The initial sections of the pulp may be prepared by heating unripened mature bananas or plantains to loosen the skin from the pulp, cooling at least 25‹C., separating the skin from the pulp, and slicing the pulp. |
