The method involves creating an air space (9) across a monolayer (M) to deviate wastes (D) for obtaining paths, for wastes, deviated relative to grape berry dropping paths. The deviated paths are separated by separation units into paths, adjacent to the dropping paths, for waste berries and other waste paths. Grape berries (B) are recovered from the dropping paths and the adjacent paths, and wastes are recovered from the deviated paths. An independent claim is also included for a sorting installation including a grape berries and wastes sorting device.
