<P>PROBLEM TO BE SOLVED: To provide the technology for easily producing soybean beverage and soybean curd like food that substantially contains all of the nutritive components of soybean, has sensibly excellent eating texture, and delicious taste, good digestion and absorption, thus provide a processed soybean flour material that is free from green smell, almost suppresses thermal denaturation of the protein, in addition, can easily produce the object soybean beverage only by dissolving, dispersing and homogenising the flour material. <P>SOLUTION: The processed soybean flour material that is obtained by treating raw soybeans with heat and has a water solubility nitrogen index of 55 to 70, a LOX value of less than 20, includes no or very little amount of n-hexanal and has a brix value of 3.0 to 0.6. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
