A method for the production of a spelt-containing food additive (I) involves: (a) cleaning spelt grains; (b) husking the grains; (c) chopping the grains once or several times; and (d) roasting the chopped grains. Independent claims are also included for: (1) a food additive (I) obtained by this method; (2) sausage containing (I), especially urban sausage; and (3) cheese containing (I).
