摘要 FIELD: bakery industry, in particular, production of bread containing filler. ^ SUBSTANCE: bread contains wheat flour dough and filler used in predetermined ratio, said filler being formed as fruit-berry-nut mixture having moisture content of 14.2-27.6 wt%. Filler contains raisin, mixture of dried fruits selected from the group comprising pears, fig, apples, banana, prunes, dried pitted and halved apricot, and peach, which have been preliminarily wetted and ground into 5-7 mm sized pieces. Filler further contains nut, flavor and spice additives, sand sugar, and edible salt. Also, the invention refers to filler which is an independent subject-matter of the invention. Filler components are used in predetermined ratio. The invention allows wider range of fruits with sour taste to be used as components of dried fruit mixture. ^ EFFECT: increased moisture retention capacity of fruit-berry-nut components of filler, prolonged retention of bread in fresh state, improved taste and appearance of bread crumb. ^ 9 cl, 3 ex
