<P>PROBLEM TO BE SOLVED: To provide a cheese-in fish paste having a novel shape and made so that fish-flesh thin flakes peel off from the paste when eaten so as to provide novel palate feeling: and to provide a method for producing the cheese-in fish paste. <P>SOLUTION: The cheese-in fish paste has a novel shape and novel palate feeling, and is produced through the following process resulted from earnest developmental study: incompletely mixing salt-ground fish flesh with cheese semi-molten at a grinding-up temperature for ground fish flesh; and thereafter, heating the mixture to produce a food having a nonuniform layer structure comprising the salt-ground fish flesh and the cheese. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
