PROBLEM TO BE SOLVED: To simultaneously achieve the drying time shortage, surface hardening prevention and microorganism proliferation inhibition of a material. SOLUTION: This method for drying the material is characterized by dividing the proliferation behaviors of bacteria in a drying chamber into four regions I, II, III, IV from the correlation of a relative humidity in the drying chamber with the water content of the material, setting bacterium non-proliferating regions capable of inhibiting the proliferation of bacteria, dividing a material-drying process into the front period and the rear period, and maintaining all of the front and rear periods of the material-drying process as the bacterium non-proliferating regions. Standards for setting the bacterium non-proliferating regions are a relative humidity of about 70% in the drying chamber and a water content of about 120%-d.b. The water content of about 120%-d.b. is a standard for dividing the front period and the rear period of the drying process. For example, all of the drying process can be maintained in the bacterium non-proliferating regions, when the front period and the rear period of the drying process are in the region I (low humidity high water content region) and the region II (low humidity low water content region), respectively.
