Onions or garlics are chopped finely, crushed to press out the juices which are clarified by filtration and sterilized by filtration. The sterile juice is metered into aerosol spray cans and charged with gastronomically acceptable gas eg. C02,N2,N20. Small amounts may be sprayed as required while the bulk is stored in the can. |
