<p>The valve seat forming the inlet and outlet to the primary and secondary evaporators can be heated, as it comes into contact with the sugar, water and starch syrup forming the fondant mixture. The seat can be double walled with hot air, water or steam heating coil design. The housing taking the cooler and heater forms a vacuum space coupled to the evacuated secondary chamber. A pump drawing the mix out of the evacuated chamber closes off the vacuum spaces specified.</p> |
