The process involves carrying out hydroponics of endives (17) by supplying nutritive solution to roots. The surrounding temperature of the endives is lowered the day before the separation of the root and floral stalk, for blocking cellular function of the stalk. The stalk and the leaves of the endives are cut into slices. The sliced are cleaned in osmosis purified water bath and are drained and dried by centrifuging the sliced endives. An independent claim is also included for a cutting device for implementing the cultivation and preparation process. |
