<p>An apparatus for measuring masticatory efficiency which has a tank (3) containing an agitation liquor to be supplied into a measurement container (2), a heater for heating the agitation liquor in the tank (3), an agitator for agitating a chewed food piece in the agitation liquor in the state that both of the chewed food piece and the agitation liquor are contained in the measurement tank (2), a concentration measuring unit (5) for measuring the concentration of a food component eluted from the surface of the chewed food piece into the agitation liquor, and a controlling unit. The controlling unit controls the operations of the heater, the agitator and the concentration measuring unit (5) and, furthermore, determines the masticatory efficiency evaluated based on the measurement data obtained by the concentration controlling unit (5).</p> |
