发明名称 PROCESS FOR PRODUCING INSTANT FRIED NOODLES
摘要 A process for producing instant fried noodles having a brown appearance whereby a metal-roast texture and a savory smell can be constantly, stably and surely imparted. Wheat flour, starch, sodium chloride, water and so on are mixed together to give a dough. After kneading and spreading, the dough is rolled to give noodle strips of a definite thickness. Next, these strips are cut in a definite width and waved to form noodles. After gelatinization, these noodles are molded into a definite shape and fried in oil to give an instant fried noodle mass. The surface of this noodle mass is browned by roasting until the surface temperature of the noodle mass attains 150°C to 240°C.
