The invention refers to the dairy industry, namely to a process for producing the carbonated lactic beverage airan. The process, according to the invention, includes preparation of a mixture of reconstituted milk and cheesy whey with the acidity of 14...18?T, in the ratio of (90:10)...(40:60) respectively, to which it is added 1 mass % of saccharose, heating of the mixture up to the temperature of 60...65?C, homogenization, thermal treatment at the temperature of 75...80?C with ageing during 10...15 s, cooling up to the leavening temperature, introduction of the leaven, leavening up to the acidity of 75...80?T, addition to the obtained coagulate of the gustatory additives, mixing, cooling, saturation with carbonic acid gas and bottling of the finished product. The result consists in improving the organoleptic properties and in simplifying the beverage production process.
