PROBLEM TO BE SOLVED: To provide a polyglycerol fatty acid ester affording the production of a solubilized material or a stable emulsion which is impossible with a conventional surfactant. SOLUTION: The polyglycerol fatty acid ester is obtained by esterifying a polyglycerol in which the hydroxyl value is≤1,200 and the content of primary hydroxy groups in the whole hydroxy groups is≥50% with a fatty acid.
