Manual safety vegetable cutter comprising: a frame ( 1 ) which is supported on feet ( 2 <SUB>1</SUB> , 2 <SUB>2</SUB>) and which is provided with two parallel longitudinal uprights ( 3 <SUB>1</SUB> , 3 <SUB>2</SUB>) which define two guiding rails for a carriage ( 5 ) which can be moved back and forth in translation and which are connected by means of a plate ( 4 ) for adjusting the cutting width, and at least one cutting blade ( 11 ) which is mounted transversely between the longitudinal uprights ( 3 <SUB>1</SUB> , 3 <SUB>2</SUB>), characterised in that it is provided with at least one removable disc-cutting cartridge ( 15 ) which can be inserted longitudinally between the uprights ( 3 <SUB>1</SUB> , 3 <SUB>2</SUB>) of the frame ( 1 ) and which comprises a first edge ( 14 ), on which the cutting blade ( 11 ) is mounted, this disc-cutting cartridge ( 15 ) being provided with gripping means which co-operate with positioning means which are provided on the frame ( 1 ).
